We are at the Grand Rapids Farmers'Market again in the 2011 season.
Market times are Mondays, 3 - 7 pm; Wednesdays and Saturdays 8 am - 1 pm.

Now taking orders for:
* Beef quarters, halves, and wholes to be processed in October of 2011; please order by mid-July
* 1/2 and whole hogs to be processed in July and October of 2011
* whole chickens available throughout the summer

Beef cattle and hogs for custom processing:
  • You order a 1/4, 1/2, or whole beef; or a 1/2 or whole hog.

  • I arrange a butchering date with a local custom processor of your choice, and deliver the animal to the butcher.

  • You tell the butcher how you want your meat cut: package size, choice of cuts, and so on. (The butcher can help you with this part.)

  • When your meat is ready, you pick it up from the butcher and pay the butcher for the processing.

  • I'll send you an invoice for the meat, and you pay me for just the meat.

You have the right to visit the farm to choose your own animal prior to custom butchering.

Prices and Meat Quantities


* NOTE that the processing prices will vary from butcher to butcher. Processing costs will also vary depending on your choice of cuts.
The prices given in this table are examples of typical costs, not guarantees.



Beef Pork

Price: $1.75 per pound of carcass weight

Price: $1.70 per pound of carcass weight

Your total cost:

1/4 beef carcass = about 150 lbs.
150 lbs. x $1.75 = $262.50 for the meat
150 lbs. x $0.45 = $ 67.50 for processing
plus slaughter fee & mileage = $12 to $20
Total = $342 to $350


Your total cost:

1/2 hog carcass = about 95 lbs.
95 lbs. x $1.70 = $161.50 for the meat
95 lbs. x $0.55 = $ 52.25 for processing
plus slaughter fee & mileage = $15 to $25
Total = $229 to $239


What you get:

1/4 beef = about 95 lbs. cut and wrapped meat.
This 95 lbs. includes bone-in cuts of meat.
(If you want all boneless meat, you need to tell
the butcher and your total pounds will be less.)
This will take up about 3 cubic feet of freezer space.
Cuts are your preference as you told the butcher.
Final cost per pound = $3.60 to $3.70


What you get:

1/2 hog = about 75 lbs. cut and wrapped meat.
This 75 lbs. includes bone-in cuts of meat.
(If you want all boneless meat, you need to tell
the butcher and your total pounds will be less.)
This will take up about 2.5 cubic feet of freezer space.
Cuts are your preference as you told the butcher.
Final cost per pound = $3.05 to $3.19
